Spinach soup is a familiar dish to Vietnamese families, especially in the Northern region. This soup is not only nutritious but also has many health benefits. Spinach grows well in all types of soil, easy to grow, and resistant to pests and diseases. Spinach can be grown year-round, but it yields the best and grows best in the summer - from the third lunar month to September.
Step 1: Preparation

Foam boxes, buckets... with dimensions of 40x60x12cm. Holes should be drilled at the bottom of the tray for water drainage, to prevent root rot caused by excessive watering. You can also plant spinach in empty patches in the garden.
Planting soil
Choosing soil types such as light loam, medium loam, sandy soil mixture, pH ranging from 6-6.7. You can either purchase soil or mix it with compost, aged cow manure, chicken manure, earthworm castings, rice husks, coconut fiber...
Seeds
Currently, there are two types of spinach seeds available in the market: red spinach and white spinach. Red spinach tastes better but grows slower than white spinach. Both types of seeds are available at supermarkets or agricultural supply stores.
Step 2: Soaking and sowing seeds

Before sowing, soak the seeds in warm water at a temperature of 45-50°C. Let the seeds soak overnight until they crack. Once the seeds crack, sow them with a spacing of 10cm between each plant. After sowing the seeds, cover them with a thin layer of soil and water gently with a spray nozzle.
You can also skip the soaking and directly sow the seeds. However, soaking the seeds increases germination rate and promotes faster growth.
Step 3: Care

Ensure regular watering for the plants as spinach is drought-sensitive. However, avoid excessive watering as the plant roots are prone to rot.
After spinach has grown 4-5 leaves, apply a layer of compost, earthworm castings, chicken manure, goat manure, or organic fertilizer. Fertilize every 2 weeks.
Note on pest prevention: The main pests of spinach are leaf miners and some leaf-eating caterpillars, which are not severe. Manual control methods such as trapping and removing pests and cutting off egg clusters are sufficient.
Step 4: Harvesting
After 40-45 days of planting, spinach can be harvested for the first time. When harvesting, use a knife or scissors to cut about 20-30cm from the base.
