- Place dry rice flour in a bowl, add about 250ml of water, beer, turmeric powder, 1 teaspoon of salt, chopped chives. Stir the mixture until the batter is smooth, then refrigerate for about an hour.

- Wash the meat thoroughly, cut into small pieces (preferably choose pork belly or fatty meat) marinate with 1/2 teaspoon of fish sauce, 1 teaspoon of MSG, 1/3 teaspoon of black pepper.
- Shrimp: wash, clean, remove heads, marinate with 1/2 teaspoon of salt, lightly crush ginger.
- Peel and wash onions, cut into small strands.
- Wash bean sprouts, drain well.
- Soak shiitake mushrooms in cold water to expand, rinse thoroughly, cut into small pieces.
- Fresh vegetables: clean, wash, and soak in diluted saltwater. Then drain well.
- Heat a pan, add 1 tablespoon of oil, wait until hot, then sauté finely chopped onions until golden brown. Add meat, shrimp, shiitake mushrooms, stir until cooked, then add sliced onions and stir again. When the ingredients are cooked, turn off the heat, season to taste.
- Pancake shell: Choose a deep pan, heat it up, add a tablespoon of cooking oil. When the oil is hot, add a pinch of pre-prepared rice flour evenly to coat the pan. Sprinkle bean sprouts, then add the cooked shrimp and meat evenly over the pancake surface. Flip the pancake, after about 2 minutes when the pancake is cooked evenly, crispy, and golden, fold the pancake in half, remove it onto a plate.
- Prepare dipping sauce: Mix delicious fish sauce according to the ratio of 2/1/1: 2 tablespoons fish sauce + 1 tablespoon sugar + 1 tablespoon water, add 2 teaspoons of lime juice + minced garlic and chili. Stir well for the mixture to blend, adjust to taste.
