Step 2: Steam the meat
- Use a piece of parchment paper larger than the size of the pork skin. Lay the pork skin on the parchment paper, then layer with a piece of meat, a layer of thinly sliced cooked pork skin, followed by another layer of meat, and another layer of pork skin. Roll tightly by hand so that the pork skin covers all the meat.
- Wrap the outside with a layer of banana leaves or aluminum foil. If using aluminum foil, poke holes evenly throughout the cold cut to allow heat to distribute evenly. Steam over boiling water for about 90 minutes until cooked.
