Today, let's delve into the art of crafting delicious peppered beef with PasGo. This combination will leave everyone pleasantly surprised and singing praises.
Peppered beef offers a delightful crunchiness and a hint of spiciness, coupled with rich, enticing flavors. While the recipe for peppered beef isn't particularly unusual or different from other stewing methods, the distinctive taste of beef and green peppercorns blend harmoniously to create an incredibly perfect dish. The beef is tender yet crispy, immersed in a flavorful sauce with the irresistible aroma of green pepper. Whether paired with rice or hearty bread, it's a culinary delight like no other.

Ingredients:
Beef tenderloin: 500g
Fresh green peppercorns: 2 sprigs
Potato: 1 tuber
Tomato sauce: 100ml
- Fresh coconut water: 1.5 liters
- Pork liver pate: 50 grams
- Cornstarch (or wheat flour): 1 teaspoon
- Salt, sugar, fish sauce, dried shallots
How to prepare beef with pepper sauce:
Step 1:
- Wash the green peppercorns thoroughly, then grind them in a mortar.
- Wash and cut the beef into large square pieces, approximately 3 cm in size. Marinate the beef with 1 teaspoon of cooking oil, 1 tablespoon of salt, 1 tablespoon of sugar, and freshly ground peppercorns for about 30 minutes to let the beef absorb the seasoning. You can wear nylon gloves and massage the beef to ensure even marination.
Mix cornstarch (or flour) with 2 tablespoons of water, stir until dissolved.

Peel and wash potatoes, then cut into square pieces about 2/3 the size of beef.

Peel and finely chop dried onions.
Step 2:
- Place the pan on the stove, pour in enough cooking oil to fry the potatoes. Then add the sliced potatoes to fry until they are golden brown on the outside, then remove and drain excess oil.
- Place a pot on the stove, add a little cooking oil to coat the bottom of the pot, then add the onions and sauté until fragrant, then pour in the marinated beef. Stir well until the beef is firm and no longer pink. Add 100ml of canned tomatoes, 1.5 liters of fresh coconut water, cover and simmer for about 10 minutes.
- After 10 minutes, uncover the pot, add pate, potatoes, seasonings, and fish sauce to taste, then simmer for an additional 10-15 minutes.

- After 10-15 minutes, if the beef is tender and the potatoes are soft, add the flour paste that has been dissolved, stir well, simmer over low heat. When the sauce thickens, scoop it into a bowl, serve with white rice or bread and enjoy.

Finished Product Requirements: Once completed, the dish must exude the distinctive aroma of green pepper, with a slightly thick and tender beef corn.
Notes:
- Coconut water can be replaced with regular water for cooking. However, coconut water will impart a more fragrant and sweet taste.
- If you prefer not to purchase pre-made tomato sauce, you can take 2 tomatoes, dice them finely, add water, and simmer to make tomato sauce as a substitute.
