Ingredients:
- Bitter melon: 1kg
- Sticky rice: 1 cup
- Brown rice: 1 cup
- Peeled split mung beans: 3 tablespoons
- Sea salt: 1 tablespoon
- Lemongrass: 10 stalks
- Lime leaves: 1 bunch
- Chilies: 5 pieces
- Bitter melon
Instructions:
- Prepare the ingredients: Soak sticky rice, brown rice, and peeled split mung beans separately in water for 30 minutes. Drain the soaked rice and beans. Peel and clean the bitter melon. Wash lemongrass, chilies, and lime leaves, then let them air dry. Slice the lemongrass diagonally and keep the chilies and lime leaves whole.
- Cooking process: Heat a pan until hot, then dry roast each type of rice separately. Stir constantly until the rice turns golden and aromatic. Transfer to a bowl and set aside. Dry roast the peeled split mung beans until well-cooked. Similarly, roast the sea salt until it turns milky white, then turn off the heat. Coarsely grind the roasted sticky rice, brown rice, peeled split mung beans, and salt. Mix well and store in a glass jar for later use. Heat a pan with enough cooking oil. Once hot, fry the lemongrass and chilies until crispy, then drain excess oil. Fry the bitter melon for 2-3 minutes until cooked and crispy, then remove and drain. Use a small stainless steel sieve to coat the bitter melon with the roasted salt mixture, lemongrass, and chilies. Finally, plate and serve the crispy salted bitter melon!
