- Step 1: Remove the core from the lotus seeds to avoid bitterness and difficulty in consumption. Cut off the black stems and soak the seeds in warm water for about 1 hour.
- Step 2: Prepare the aloe vera by peeling off the outer skin, leaving the white pulp. Cut it into pomegranate-like pieces.
- Boil water in a pot, add aloe vera, and when it floats, remove it and place it in a cold lemon water bath for a second time.

3. Lotus Seed Jelly with Pandan Flavor
Ingredients:
- Fresh lotus seeds
- Sugar
- Pandan jelly powder
Instructions:
- Rinse the lotus seeds and place them in a pot with water covering about 2 finger joints.
- Boil the lotus seeds with high heat, then reduce to medium heat and simmer for about 10 minutes. Add sugar to taste and let it cool for about 2 minutes before turning off the heat. Note: if using fresh lotus seeds, you may need to boil them longer.
- Pandan jelly powder is usually sold in 50g packs for 500mL of water. When boiling the jelly, use medium heat and stir constantly to prevent sticking to the bottom of the pot and creating a burnt smell. The jelly cooks quickly, in about 5 minutes. Pour the jelly into a bowl and place it in an ice bath or refrigerate to cool quickly.
- Cut the jelly into bite-sized pieces, add it to the lotus seed dessert, and you have an incredibly delicious bowl of dessert.

4. Aloe Vera Lotus Seed Mung Bean Sweet Soup
Ingredients: Serving Size: 2 people
- Aloe vera: 3 branches
- Mung beans: 150g
- Fresh lotus seeds: 200g
- Rock sugar: 400g
- Pandan leaves: 1 stalk
Instructions:
- Prepare all the ingredients: Clean the fresh lotus seeds, remove the stamen, and soak or lightly boil the mung beans. Cut the aloe vera into chunks, peel off the green skin.
- Cut the aloe vera into pearl shapes. Prepare a bowl of saltwater, rinse and repeat the process three times with saltwater, then briefly dip in hot water to remove the sliminess.
- Bring water to boil, add the lotus seeds and mung beans, cook until tender. Add pandan leaves for fragrance, and rock sugar to dissolve in the water. Once it boils, add the aloe vera and cook until the aloe vera is done. Turn off the heat.
