1. Pepper-Braised Spare Ribs
Pepper-braised spare ribs bring warmth and deliciousness, just the thought of it makes you crave. Particularly enjoyable on cool or chilly days, the fragrant and tender ribs, spicy and savory, tantalize all ages. Your family meal will be even more cozy when everyone finds it appetizing.
Ingredients:
- Pork ribs: 500gr
- Green pepper: 3 branches
- Chili peppers: 5 pieces
- Garlic, shallots: 50gr
- Scallions, cilantro: 50gr
- Seasonings: pepper, chili powder, broth mix, sugar, fish sauce, cooking oil
- Prepare ingredients:
- Wash and drain the ribs, then cut into bite-sized pieces. Blanch the ribs in boiling water for about 2 minutes to remove impurities and odor, then remove and rinse again, drain.
- Peel and crush the garlic and shallots, finely chop.
- Remove the stems and seeds from the chili peppers, cut into strips.
- Wash the scallions and cilantro, cut into sections.
- Marinate the ribs:
- Place the ribs in a bowl, add 1 teaspoon of pepper, 1 tablespoon of fish sauce, 1 tablespoon of sugar, 1/2 of the chopped garlic and shallots, mix well and marinate for about 1 hour.
- Make caramel sauce:
- To make caramel sauce, put 1 tablespoon of sugar in a pan, over low heat let the sugar melt slowly. When the sugar turns brownish, quickly add 1/2 cup of water, bring to a boil again then turn off the heat and let cool.
- Braise the ribs:
- Use a clay pot, add 1 tablespoon of cooking oil, stir-fry the remaining chopped garlic and shallots with 2 teaspoons of chili powder.
- Add the marinated ribs, stir-fry over low heat for about 10 minutes. When the ribs firm up and change color, add the caramel sauce along with peppercorns and sliced chili peppers, stir well with the ribs.
- Simmer for about 5 minutes, add water just enough to cover the meat in the pot. Cover, simmer over low heat for 30 - 40 minutes until the ribs are tender and fragrant. Before turning off the heat, taste and adjust seasoning with salt, broth mix, and sugar to taste.
- Serve the braised ribs on a plate, sprinkle with some pepper, scallions, and cilantro for added color and appeal. Enjoy the pepper-braised spare ribs with hot steamed rice for an indescribably delicious experience.

Braised Pork Ribs with Lotus Root
Ingredients:
- 500g pork ribs
- 300g lotus roots
- Chili, purple onion, garlic, spring onion
- Seasonings: Pepper, sugar, cooking oil, seasoning powder, chili paste, rice vinegar
Steps:
1. Cut the ribs into bite-sized pieces. Rinse them and blanch in boiling water.
2. Marinate the ribs with 1 tablespoon of seasoning powder, 1 tablespoon of sugar, 1 tablespoon of chili paste, 1 tablespoon of rice vinegar, 1/3 tablespoon of ground pepper, and minced garlic.
3. Peel the lotus roots, cut them into 2cm long pieces, rinse, and drain.

Braised Pork Ribs with Lotus Roots:
1. Heat 2 tablespoons of cooking oil and 1 tablespoon of sugar in a pan until caramelized.
2. Add the pork ribs and stir until they are browned.
3. Add the lotus roots, enough water to cover the meat, chili slices, and seasonings.
4. Simmer until the dish boils again, then reduce the heat.
5. Braise until the sauce thickens, then add spring onions and turn off the heat.

Ingredients:
- 400g pork ribs
- 1 teaspoon soup powder
- 2 teaspoons fish sauce
- 1 teaspoon sugar
- 2 shallots
- 1 can of Coca-Cola

Steps:
1. Cut the ribs into bite-sized pieces, then wash them with salt and water. Parboil the ribs in boiling water for about 5 minutes, then remove and rinse again.
2. Peel and crush the shallots, then soak them in water and extract the shallot water.
3. Marinate the ribs with fish sauce, soup powder, sugar, and shallot water, adjusting to taste.
4. Mix the ingredients well and marinate for about 15 minutes.
5. Heat a pot, add a little oil, and stir-fry the ribs until the surface is firm. Then add the Coca-Cola to braise.
6. Simmer until the Coca-Cola reduces, then turn off the heat.
