Ingredients:
- 1 kg fresh octopus
- 1 jar of shrimp sate sauce

Instructions:
- Step 1: Rinse the octopus thoroughly with cold water after purchase. Use a knife to remove the eyes and innards, then cut it into bite-sized pieces. Finally, wash the octopus with salt and lime or vinegar to remove any sliminess.
- Step 2: Season the octopus with 1.5 teaspoons of bouillon powder, a pinch of salt, 1 teaspoon of sugar, 1 tablespoon of sate sauce (adjust to taste), and 1/3 tablespoon of fish sauce. Mix well and let it marinate for 15-20 minutes.
- Step 3: Prepare the vegetables and herbs. While waiting for the octopus to marinate, chop the onions into small pieces and slice the lemongrass into thin rings. Chop the chili, garlic, and lemongrass finely and remove the seeds.

2. Sweet and Sour Octopus Stir-Fry
Ingredients:
- 500g octopus
- 200g cabbage
- 200g tomatoes
- 30g Chinese celery
- 200g cucumber
- 150g onions
- 1 clove garlic
- 1 piece ginger
- 1 tablespoon white wine
- 2 teaspoons sugar
- 2 teaspoons bouillon powder
- 1 teaspoon pepper
- 1/2 tablespoon oyster sauce
Instructions:
- Prepare the octopus:
- Place the cut octopus in a bowl, add 1/4 teaspoon sugar, 1/4 teaspoon bouillon powder, and 1/4 teaspoon ground pepper, mix well, and marinate for 10 minutes.
- Prepare other ingredients:
- Wash and cut the onions into wedges.
- Wash the Chinese celery, drain, and cut into 2cm pieces.
- Cut the cabbage into thick slices about 1cm thick.
- Peel and finely chop the garlic.
- Wash the cucumber, cut off 2 ends, vertically split and cut diagonally into bite-sized pieces (about 1cm thick).

- Cook the octopus with other ingredients:
- Heat a pan, add 100ml cooking oil, over high heat. When the oil is hot, add the minced garlic and fry until golden. Then add the octopus, stir-fry for about 2 minutes, then cover and cook for about 3 - 5 minutes until the octopus turns slightly brown.
- Add the cabbage, cucumber, and tomatoes, then add about 100ml of water.
- Season with 1/2 tablespoon bouillon powder, 1/2 tablespoon sugar, 1/2 tablespoon oyster sauce, and stir-fry for 2 more minutes, then turn off the heat. Add the onions and Chinese celery, sprinkle with 1/4 teaspoon ground pepper.
