Tamarind Gio, beef gio, or beef jerky is the name of a specialty dish from Nghe An made from beef and minced beef skin rolled and steamed in a water bath. This dish originates from Nam Dan district, Nghe An province, Vietnam (me means calf in the local dialect). It has been popular since the 2000s with a unique flavor and eating style compared to traditional gio varieties. People often seek to buy these countryside specialties as gifts for each other during Tet. Tamarind Gio is neatly packaged, convenient, and meaningful as a gift, meeting consumer demand.
This delicious specialty is abundant in Nghe An. Tamarind Gio is made from tamarind fruit or calf (calf) raised in mountainous areas such as Nam Dan, Do Luong, and Thanh Chuong. The tamarind meat pieces, which must be at least 15cm long (meat from a calf under one year old), are mixed with spices such as pepper, cardamom, pure fish sauce, and raw chicken eggs to enhance the flavor of the meat. After marinating for about 3 - 5 hours, the gio is wrapped. Gio is tightly wrapped in two sizes: 0.5 kg and 1 kg, steamed for 4 hours. The fire must be moderate and even to ensure the gio is cooked on time. If steamed for too long, the gio will become soft and lose the sweetness of the meat. Tamarind Gio is taken out to cool, wrapped in paper, and placed in the freezer for about half a day before eating for the best taste.

When wrapped, they tightly roll each piece of meat and place it in a steamer for about 12 hours. The color of ostrich Gio is similar to beef Gio, but the meat is softer, smoother, and sweeter. The lingering sweetness remains in the throat after swallowing. This is a nutritious, easy-to-eat dish, suitable for families with elderly and young children.
