Cooking a perfect hotpot with exquisite flavor is not difficult at all. Just follow the recipe below carefully:
Ingredients
- Goat thigh meat: 1kg
- Taro: 200gr
- White radish, cut into pieces: 200gr
- Peeled and cleaned lotus root: 200gr
- Tofu: 3 pieces
- Lemongrass, garlic, onions
- Spices: Cordyceps, shiitake mushrooms, Chinese yam, red dates, angelica root, ginseng, ginseng, cinnamon, star anise, ginger, white wine, five-spice powder, fermented bean curd, satay sauce, cooking oil, MSG, seasoning powder, sugar, salt.

- Wash the goat thigh meat with crushed ginger and 2 tablespoons of white wine to remove the odor.
- Separate the meat and cut it into bite-sized pieces. Place the bones in a pot of water with crushed lemongrass to blanch, then remove and rinse with water.
- In another pot of water, add the blanched bones along with white radish, lemongrass, Cordyceps, shiitake mushrooms, Chinese yam, red dates, angelica root, ginseng, cinnamon, and star anise to make the broth.
- Marinate the goat meat with 2 teaspoons of seasoning powder, 1 teaspoon of sugar, 1 teaspoon of satay sauce, and 1 teaspoon of five-spice powder. Mix well with chopsticks and marinate for about 5 minutes to let the meat absorb the seasoning.
- Heat cooking oil in a pan, add minced garlic and lemongrass, then add the marinated goat meat and stir-fry until cooked.
- After simmering the hotpot broth for about 40 minutes, add 2 tablespoons of MSG, 1/3 tablespoon of seasoning powder, 1/3 tablespoon of salt, 2 tablespoons of brown sugar, and 1 tablespoon of black bean sauce.
- Simmer the hotpot broth for another 10 minutes, then remove the cinnamon and star anise and add the lotus root to cook for another 10 minutes.
- Heat oil in a pan, then fry the taro pieces until golden.
- Prepare the dipping sauce by mixing 2 tablespoons of fermented bean curd, 1/2 tablespoon of sugar, 1/2 tablespoon of minced lemongrass, and 1/2 tablespoon of minced chili. Then, use a spoon to stir until the sugar is completely dissolved.
