1. Tender Fried Beef Dish
Ingredients:
- 300 grams of beef tenderloin
- 10 grams of flour
- 5 grams of thick soy sauce
- 10 grams of light soy sauce
- 1 gram of salt
- 5 grams of cooking wine
- 2 grams of sugar
- 30 grams of dried chili
- 10 grams of sesame seeds
- 15 grams of ginger
- 15 grams of garlic
- 2 spring onions
Instructions:
Step 1:
- Rinse the beef tenderloin thoroughly and pat dry with a clean cloth.
- Slice the beef into long strips about 2cm wide.
- Peel and finely chop the ginger and garlic. Rinse and chop the spring onions. Finely chop the dried chili.
Step 2:
- Place the beef in a bowl and add 5 grams of thick soy sauce, 10 grams of light soy sauce, 1 gram of salt, 5 grams of cooking wine, and 2 grams of sugar.
- Wear gloves, squeeze, and mix well to marinate the beef. Marinate for at least 30 minutes to ensure the meat absorbs the flavors and becomes tender.
Step 3:
- After marinating the beef, thread it onto skewers. Avoid threading too thickly, as the meat will be difficult to cook, but do not thread too thinly, or the meat will shrink during frying.
Step 4:
- Prepare a deep pan (or a small pot) to save cooking oil.
- Once the pan is hot, pour in the cooking oil (use enough oil to fully submerge the skewered beef).
- When the oil is hot, add the skewered beef and fry over medium heat.
- Fry for about 5 minutes, then remove the beef skewers and drain excess oil.
Step 5:
- Prepare another pan, add about 3 tablespoons of cooking oil, then add finely chopped ginger and garlic. Stir-fry until fragrant.
- Next, add the fried beef from step 4.
- Stir well to coat the skewers with the ginger and chili, then add the spring onions, dried chili, and sesame seeds. Stir-fry until the dish is fully cooked.
