2.1. Prepare the Ingredients
- Pork heart: half a kilogram
- Pickled vegetables
- Tomatoes: 2 pieces
- Dried shallots, garlic, ginger, spring onions
- Seasonings: fish sauce, salt, MSG, pepper

2.2. Method for Cooking Stir-Fried Heart with Pickled Vegetables
Step 1: Preparing the Heart
- For young heart: First, stroke along the length of the young heart until done twice. Then, simply squeeze salt to remove bacteria and odor from the outer layer. Rinse thoroughly with water to complete the preparation of the young pork heart.
- For mature heart: Flip the mature heart inside out and use your hands to remove all excess fat inside. Next, pour flour onto the mature heart and squeeze vigorously to remove all the sliminess, rinse with water, repeat 2-3 times. After kneading the heart with flour, continue to add salt and squeeze vigorously to remove bacteria and odor from the heart, rinse with water, repeat twice. Finally, add vinegar or lemon juice and squeeze, rinse thoroughly with water.

Step 2: Preparing Pickled Vegetables and Other Ingredients
- Rinse the pickled vegetables with clean water to reduce saltiness and sourness.
- Cut tomato slices, slice spring onions, finely chop ginger, garlic, and dried shallots.
Step 3: Stir-Frying the Heart with Pickled Vegetables
- Heat a pan on the stove, add cooking oil and sauté finely chopped ginger and garlic until fragrant. Then, add the heart and stir-fry until cooked, then turn off the heat and transfer the heart to a plate.
- Using the same pan just used, add more cooking oil and sauté the finely chopped spring onions and garlic until fragrant. Add the tomatoes and stir-fry until softened, then continue to add the pickled vegetables and stir-fry until cooked.
- Add the heart to the pan with the stir-fried pickled vegetables and toss well, season with fish sauce, salt, sugar, and MSG to taste. Stir for another minute, then turn off the heat.
- Add the spring onions and pepper to the pan of stir-fried heart and pickled vegetables and toss well. Finally, transfer the finished dish to a plate and get ready to enjoy.
