1. Grilled Chicken Wings
Ingredients:
- 400 – 500g chicken wings (adjust to your preference)
- 1 tablespoon honey
- 1 tablespoon oyster sauce
- 1 tablespoon soy sauce
- 2 – 3 tablespoons chili sauce
- 1 tablespoon finely chopped shallots
- 1 teaspoon ground ginger
- 1 teaspoon minced garlic
- 1 tablespoon sesame oil
- 1 teaspoon pepper
Instructions:
- First, clean the chicken wings thoroughly, soak them in saltwater or vinegar for about 10 minutes, then rinse well. You can lightly score the drumettes if desired.
- Mix all the spices above with the chicken wings, except for the sesame oil. Marinate the chicken wings for about 1 – 2 hours.
- When ready to grill, add sesame oil and mix evenly.


2. Grilled Fish
Ingredients:
- 500 grams snakehead fish (also known as mudfish or banana fish, can be replaced with your favorite fish)
- 1 packet rice paper
- 100 grams rice vermicelli
- 1/2 ginger
- 1/2 onion
- 2 teaspoons salt
- 4 teaspoons fish sauce
- 1 teaspoon white sugar
- 1/2 teaspoon pepper
- 1/2 teaspoon seasoning powder
- 2 tablespoons honey
- 1 teaspoon oyster sauce
- 1 teaspoon sesame oil
- 1 cucumber, 15 grams peanuts
- Spring onions, lettuce
- 2 tomatoes
- 1/2 teaspoon lime juice
Instructions:
- Prepare the fish with diluted saltwater or white wine to remove fishy odor.
- Peel and crush the ginger, marinate the fish with a small amount of ginger to reduce fishy smell and add flavor when grilling. Rub the fish with two teaspoons of salt, two teaspoons of fish sauce, a small amount of seasoning powder, a little pepper, then use your hands to rub the spice mixture into the fish body evenly, so that the grilled fish wrapped in rice paper will be more flavorful.
- Peel and slice the onion, peel the sapodilla. Arrange the onion on aluminum foil (used for grilling in the oven), and place the fish on top, wrap tightly and put in the refrigerator overnight.
- Mix the fish grilling sauce: 2 tablespoons honey, 1 teaspoon oyster sauce, 1 teaspoon sesame oil. Use the sauce mixture to spread evenly on the fish body.
- Clean the spring onions, chop finely. Pour boiling oil into a bowl of pre-chopped spring onions to cook the onions, then spread them on the grilled fish wrapped in rice paper.
- Grill the fish for about 30 to 45 minutes, at a temperature of 200 degrees Celsius. Remember to occasionally remove the fish and spread the spice mixture on the fish body to prevent the grilled fish from drying out. When the fish turns dark yellow, remove it from the oven, then the grilled fish dish is ready to serve.


3. Skewered Grilled Beef
Ingredients:
- Beef
- 1 tablespoon sesame oil
- 1 tablespoon honey
- 1 teaspoon minced garlic
- 1 teaspoon soy sauce
- 1/4 teaspoon (ground pepper, MSG, chili powder)
- 1 tablespoon oyster sauce
- 1 tablespoon minced lemongrass.
- Bell peppers
- Onion
- Eggplant
Instructions:
- Clean the beef, cut into square pieces. Make the marinade for grilled beef: 1 tablespoon sesame oil + 1 tablespoon honey + 1 teaspoon minced garlic + 1 teaspoon soy sauce + 1/4 teaspoon (ground pepper, MSG, chili powder) + 1 tablespoon oyster sauce + 1 tablespoon minced lemongrass. Mix well until the mixture becomes thick.
- Clean the bell peppers, cut into pieces. Clean the eggplant, leave it whole. Peel the onion, cut into wedges.
- Marinate the beef with the prepared spices, mix well, marinate for about 2 hours. When grilling, skewer the beef, bell peppers, eggplant, and onion alternately.


4. Grilled Pork
Ingredients:
- Pork belly (or shoulder)
- Apple juice
- Garlic, lemongrass, chili
- Toasted sesame seeds
Instructions:
- Cut the pork into small bite-sized pieces, marinate with apple juice (about the juice of 2 fresh apples). Minced garlic, lemongrass, chili, and shallots are marinated together. Marinate for about 20 – 30 minutes until the spices are evenly absorbed.
- Do not pour out the excess apple juice in the marinating bowl, use this liquid to brush onto the surface of the meat while grilling to enhance flavor absorption and prevent the meat from drying out. When the meat is cooked, sprinkle some toasted sesame seeds on the surface. This dish goes well with bread, vermicelli, or rice.


5. Grilled Octopus
Ingredients:
- Octopus
- Chili peppers
- Seasoning powder
- Cooking oil
- Salt
- Pepper
Instructions:
- Prepare fresh octopus by removing the eyes. If too large, slice and blanch with guava leaves.
- Finely chop chili peppers, mix with seasoning powder, cooking oil, a pinch of salt, and pepper. Marinate the octopus with this mixture.
- Adjust saltiness to taste or keep it mild for dipping as octopus meat tends to absorb flavors easily.


6. Grilled Chicken
Ingredients:
- Half a free-range chicken
- Shiitake mushrooms
- Honey
- Finely chopped garlic
- Black pepper
- Soy sauce
- Water
- Chili powder
- Cooking oil, spoonful of sugar
Instructions:
- Mix the spices together and simmer on the stove until thickened.
- Wear gloves and rub this mixture evenly onto the chicken skin.
- Then use the remaining spice mixture to marinate the chicken meat.


7. Grilled Pork Ribs
Ingredients:
- Pork ribs
- Soy sauce
- Honey
- Oyster sauce
- Cooking oil
- Seasoning powder
- Black pepper
- Fish sauce
- Finely chopped garlic
- Sesame oil
- 1 can of coke
- Crushed lemongrass
- Coconut milk
- Small piece of butter
- 1 fresh lime
Instructions:
- Mix all the above ingredients together to create a thick mixture, then marinate with the ribs. This amount of seasoning can help you grill from half to 1 kilogram of ribs.
- Use plastic bags or food wrap to tightly seal the marinated rib box and store in the refrigerator.
- Then grill and sprinkle toasted sesame seeds on the surface when cooked.


8. Grilled Beef
Ingredients:
- 400 grams of beef tenderloin (you can substitute with beef shoulder or beef thigh)
- 1 dry onion, 1 garlic, 2 lemongrass (all finely chopped)
- 1 tablespoon of fresh milk
- Seasoning: 1 tablespoon of curry powder (optional), 2 tablespoons of soy sauce, 2 tablespoons of oyster sauce, 1 teaspoon of black pepper, 1 tablespoon of white wine, 1 teaspoon of caster sugar.
Instructions:
- Take a bowl, add all the seasoning ingredients, mix well to blend the spices.
- Next, add all the sliced beef into the bowl, mix well to marinate the beef with the spices.
- Marinate the beef for at least one hour to make it tender and more flavorful before grilling.


9. Grilled Pork Offal
Ingredients:
- Pork offal
- Five-spice powder
- Black pepper
- Chili paste
- Oyster sauce
- Seasoning powder
- Sugar
- Fish sauce
- Finely chopped garlic
Instructions:
- Clean the offal thoroughly, then marinate with the above spices in the right proportions.
- Mix everything in a large bowl, marinate for about 30 minutes to let the flavors soak in.
- Then put the offal in the oven or preferably on charcoal for even cooking.


10. Grilled Shrimp
Ingredients:
- Fresh tiger prawns
- Good quality shrimp salt
- Honey
- White wine
Instructions:
- Clean the prawns thoroughly, leaving the head and tail intact. Soak the prawns in white wine for about 15 minutes.
- Mix shrimp salt and honey together to create a thick mixture. If too thick, you can add a little warm water to dilute it.
- Then pour the mixture over the prawns, marinate for 60 minutes, and then grill.
