Faux braised ribs made an appearance at our family dinner last night. Occasionally, I treat my family to this dish and receive enthusiastic support from my husband and kids. The basic method of making faux braised ribs is similar to other dishes, but the key here is to use fresh and delicious faux ribs, along with a hint of fragrant shrimp paste, some spices, and accompanying ingredients. The dish will be rich and delicious. The tender and sweet faux ribs, paired with a bowl of fragrant white rice, are incredibly delicious. Ingredients:
(serving size: 4)
- Pork ribs: 500 grams
- Galangal: 1 bulb
- Lemongrass: 3-4 stalks
- 2 bulbs of onions, 1 bulb of garlic, 5 chili peppers
- Shrimp paste: 3 teaspoons
- Honey: 3 teaspoons
- White wine: 2 teaspoons
- Seasonings: cooking oil, seasoning powder, MSG, chili powder, ground pepper, sugar.
How to make faux braised ribs:
Step 1: Prepare ingredients
- Lemongrass: Remove outer layer, wash thoroughly, crush, finely chop.
- Galangal: Peel, wash, slice thinly.
- Chili peppers: Wash, finely chop 3, split 2, remove seeds, slice thinly.
- Dried shallots, garlic: Clean, finely chop.
- Pork ribs: Wash, cut into bite-sized pieces, bring a pot of boiling water to boil with 1 teaspoon of salt, then add the ribs and blanch for about 3 minutes, remove the ribs, rinse with cold water and place in a large bowl for seasoning. This is the secret to cooking tender, fragrant, and flavorful faux braised ribs.

- Marinate the pork ribs with half of the finely chopped lemongrass, sliced galangal, finely chopped red chili peppers, half of the dried shallots, finely chopped garlic, 3 teaspoons honey, 2 teaspoons fish sauce, 1 teaspoon seasoning powder, 3 teaspoons shrimp paste, half teaspoon sugar, 1 teaspoon MSG, 1 teaspoon ground pepper, 1 teaspoon cooking oil, 2 teaspoons white wine.

- Then, put on gloves and massage thoroughly so that the ingredients penetrate deeply into each rib. If time permits, marinate for about 2 hours for the ribs to absorb the flavors evenly. Otherwise, marinate for at least 30 hours for a richer taste when cooking the ribs.

Step 2: Execution
- Sauté 3 tablespoons of cooking oil with the remaining chopped dried shallots, garlic, lemongrass, and 1 tablespoon of chili powder to give the faux braised ribs a more enticing color.
- Add the marinated pork ribs along with all the marinating liquid, simmer over low heat, use chopsticks to turn the ribs evenly for 10 minutes until the ribs are cooked, firm, and the marinating liquid gives the faux braised ribs a beautiful light yellow color.
- Continue to add a small cup of water into the pot, bring to a boil, adjust the seasoning to taste, then simmer over low heat until the ribs are tender, fragrant, then add ½ teaspoon of ground pepper, stir well, and turn off the heat.
Note: If the ribs are not tender enough to your liking, you can add water and simmer until the ribs are tender as desired. When the liquid is almost evaporated, adjust the seasoning to taste.
