1. Mai fish salad
Dam O Loan (Tuy An district) is the place with the most mai fish in the Central region. According to food connoisseurs, the best way to prepare mai fish is in a salad. Simply select the fish and prepare the accompanying spices: a bowl of freshly squeezed lemon juice, roasted peanuts, a basket of fragrant herbs such as coriander, basil, mint, pennywort, sliced banana flowers, starfruit, and persimmons, a small bowl of minced ginger mixed with honey, a plate of green forest chili, and grilled rice paper.

Remember, fish should always be kept in a container of ice to maintain firmness and crispiness. Before eating, soak the fish in lemon water for a few minutes. When it turns opaque white, it's perfectly cooked. Serve the fish with a variety of condiments by placing them all in a bowl, adding a squeeze of lemon if desired, and mixing well. Eating fish salad and drinking a glass of strong wine will give you a unique and rejuvenating experience.
