

- 4 eggs
- 1 cup of milk
- 1/3 cup of flour (optional)
- 1 medium-sized tomato, finely chopped
- 4 slices of ham, finely chopped (can be replaced with meat, sausage...)

- ½ cup of mozzarella cheese
Method:

Whisk together eggs, milk, and flour in a large bowl.
Beat the eggs with the flour first, then add the milk and continue beating to create a smooth, glossy texture for the egg coating.
Pour the eggs into a preheated greased pan.
Sprinkle prepared vegetables, fruits, and ½ cup of mozzarella cheese evenly on top of the eggs. Fry until golden brown, then roll up for a beautiful presentation.
Slice the rolled eggs thinly and enjoy them hot for the best flavor.
2. Bird's Nest Eggs

To make bird's nest eggs, you'll need the following ingredients:
- 3 small potatoes
- 2 eggs
- A pinch of salt
- A handful of finely chopped herbs (such as onions or cilantro, depending on your preference)
Instructions:

Peel the potatoes, soak them in diluted salt water for about 5-10 minutes to remove the starch, then remove and shred finely.
Try to shred the potatoes lengthwise, avoiding too much breakage as it will make the cake less attractive. Crack the eggs into a bowl, separate the yolks, and mix the egg whites thoroughly with the potatoes.
Add salt, continue mixing. Heat a pan over medium heat with a little oil spread evenly on the surface.
Scoop a spoonful of potato mixture into the center of the pan. Use chopsticks to hollow out the center of the cake to create a bird's nest shape.
Note that this hollow part should not be too large, just enough for one egg yolk. Pour the egg yolk into the center of the cake, reduce the heat slightly to slowly cook the egg.
When you see the edges of the cake base starting to turn pale yellow and the egg yolk still soft, sprinkle some finely chopped herbs on the surface. Then cover and continue frying until the egg yolk has solidified, then uncover, increase the heat slightly to make the cake crispy again, and transfer the cake to a plate.
3. Freshly Steamed Eggs

For this steamed egg method, you'll need the following ingredients:
-5 eggs
-1 stick of sausage
-Seasoning: soy sauce, sesame oil, scallions
Instructions:
Steam the sausage until cooked, then remove and let it cool before thinly slicing it diagonally. Reserve a section of sausage to cut into small pieces for garnishing. This portion of sausage will be sprinkled on top of the steamed eggs in the final presentation for visual appeal.
Crack the eggs into a bowl, beat until smooth. Add water and mix well until you get a uniform mixture. The usual ratio of eggs to water is 1:1.5.
Then, strain the eggs through a sieve again to obtain a smooth egg mixture. Pour the egg mixture into bowls that have been lined with a thin layer of sliced sausage.
Wrap the bowls tightly with plastic wrap. Use a toothpick to poke a few holes on the surface to allow steam to escape, then place the egg bowls into a steamer.
Steam for about 12 minutes from the time the water boils or until the eggs are completely cooked. Remove the egg ramekins from the steamer, top with diced sausage, 1 teaspoon of soy sauce, and 1 teaspoon of sesame oil, and finally some scallions.
4. New Style Rolled Eggs

To make the new style fried eggs, you'll need the following ingredients:
- 5 eggs
- A pinch of sea salt
- Some finely chopped scallions
- Cooking oil
Instructions:

Separate the egg yolks and egg whites into two bowls.
Add a pinch of salt to the bowl of egg whites. Use a whisk to beat the egg whites until fluffy (you don't need to beat them stiff). Beat the egg yolks until smooth.
Add half a tablespoon of cooking oil to a pan and spread it evenly across the surface. Once the pan is heated, pour in the egg yolks and spread them evenly on the surface of the pan. (Make sure to cook over the lowest heat to prevent burning.)
When the egg yolks have set, pour the beaten egg whites in, fry until the egg whites are slightly firm, then roll up the eggs and continue frying until cooked through.
