What to eat in Saigon?
Bun nuoc Co Huyen
Bun nuoc Co Huyen, also known as 'scolding lady's vermicelli soup', undergoes up to 8 stages from preparing fresh ingredients to seasoning to produce a complete bowl of vermicelli soup for diners. The bowl contains various ingredients such as rare beef, pork sausage, beef balls, minced shrimp... all swimming in a rich broth with chicken eggs, topped with fragrant spring onions, creating an irresistible aroma. However, the broth is considered somewhat bland; those seeking stronger flavor may need to add fish sauce and chili salt.

Apart from the renowned vermicelli soup, there's also a spicy mixed noodles dish for those craving more intense flavors. Noodles are more popular here than vermicelli soup as the bowl of noodles is mixed perfectly by hand, served with crispy shrimp crackers and enticing pork fat.
