My initial encounter with lobster took place at Seafood Lã Vọng. It was during a dinner with a colleague and a client. The surprise hit when the restaurant served a platter of lobsters from the oven... larger than expected. Finally, to maintain courtesy, I had a waitress here handle the shell-peeling for everyone (to avoid embarrassment and stay polite with guests).

Step 1: Separate the shrimp claws first, use your hand to hold the body and twist gently.
Step 2: Then break off the smaller shrimp claws and use the pre-set small skewer to twist the shrimp meat out of the claws. Use pliers to further break the larger shrimp claws, then break them in half, revealing the meat inside. Use the small skewer to extract the meat.
Step 3: Hold the shrimp body firmly, bend the head down, twist gently to separate the shrimp head from the body. The remaining shrimp body, simply break it in half to reveal the meat, then use a small fork to delicately extract the meat. This forms a solid piece rather than tearing it into small pieces.

1. Separate the head or claws first
Many individuals might dive straight into the most delicious part of the shrimp, so they immediately separate the head along with both claws and handle the meat on the shrimp first. However, looking at the entire head and claws on the plate can make it seem a bit messy and lacking in sophistication. So, be a bit more considerate; the whole lobster is yours. Enjoy it slowly and engage in conversation with those around you.

This is something many women already know. Citrus fruits, especially oranges, should not be consumed right after seafood as they can counteract and cause indigestion.
