Ingredients (for 5-6 servings):
- 200g dried white beans (or 500g fresh white beans)
- 1kg pork ribs
- 3 tomatoes
- 3 onions
- 1 carrot
- 2 stalks of celery
- 2 tablespoons of tomato sauce
- Juice of 1 coconut
- Garlic: ½ bulb
- Seasonings: pepper, salt, cooking oil, seasoning powder, soy sauce…
Recipe for Pork Rib with Beans:

- Blanch tomatoes in boiling water, then peel and deseed before dicing them.
- Peel and wash onions, remove the core of the cucumber. - Peel and wash carrots, cut into bite-sized pieces.
- Wash celery stalks thoroughly and finely chop. Peel and finely chop garlic.

- Soak white beans overnight or for at least 5 hours until they swell, then wash and drain.

- Clean pork ribs, pat dry, cut into bite-sized pieces, blanch briefly in salted water to remove impurities. Rinse again with water, then marinate ribs with 1 teaspoon of soy sauce, 1 teaspoon of salt, for about 20 minutes to marinate.
- Heat a pot or deep pan on the stove, add a little oil, sauté garlic until fragrant, then add the ribs and fry until golden brown. Once done, transfer all the ribs onto paper towels to drain excess oil.

- Continue by adding onions to the pan, stir-fry until slightly softened, then add tomatoes and tomato sauce, stir-fry until smooth.
- Return the ribs to the pan with onions and tomato sauce. Pour in enough coconut water to submerge the ribs (if not enough, add some water), add white beans and simmer over low heat for about 30 minutes. Add carrots and cook until carrots are tender, then season with sugar and salt to taste. Simmer until the sauce thickens. When serving, sprinkle with a little black pepper.

This dish is delicious served hot with rice or bread. If you want to make a thicker sauce for dipping bread, you can add a little dissolved cornstarch in water before turning off the heat.
