1. What are Waffles?
Waffles, also known as cinnamon waffles, are a dish originating from Belgium. This is a traditional dish and a pride of Belgian cuisine. If you travel to Belgium, you will easily come across waffle carts everywhere. On the roadside carts, in markets, or in luxury restaurants.
These cakes are made with either beer yeast or baking powder from egg whites. This type of waffle has a rectangular shape and is very crispy. When eaten, sprinkle with powdered sugar, top with whipped cream, and fruits.

3. Easy homemade waffle recipe
In this article, Mytour will guide you through making traditional waffles.
3.1. Ingredients
- 2 large eggs (60 grams each with shell)
- 10 grams sugar (for mixing with egg yolks)
- 30 grams sugar (for beating with egg whites)
- 35 grams unsalted butter, melted
- 170 grams fresh milk, no sugar added
- 1 teaspoon vanilla extract
- 155 grams cake flour
- 10 grams baking powder
- Pinch of salt, powdered sugar
- ¼ teaspoon cream of tartar (substitute with lemon juice or white vinegar)
3.2. Ingredient Notes
- Do not substitute baking powder with baking soda
- Use liquid vanilla extract instead of powdered to avoid bitterness
- The amount of butter in the recipe is relatively high, so opt for high-quality animal butter. Avoid brands like Tuong An, Meizan.
- If cake flour is unavailable, you can substitute with 130 grams all-purpose flour and 25 grams cornstarch, or solely use all-purpose flour. Note that using all-purpose flour alone may result in less fluffy waffles compared to cake flour.
3.3. Preparation Method
Preparing the flour mixture:
Step 1: Crack the eggs, separating the yolks and whites. Beat the egg whites until fluffy (this makes the waffles softer). Ensure that the bowl and whisk used for beating the egg whites are free from any oily residue like cooking oil, egg yolks, etc.
Step 2: Add 10 grams of sugar to the egg yolks, and whisk until the mixture becomes light and pale yellow in color.

Step 3: Next, add 35 grams of melted butter to the bowl of egg yolks, stir well. Then add 170 grams of milk and vanilla extract, stir until well combined.

Step 4: Combine the flour and baking powder in a small bowl and mix well. Divide the flour mixture into two portions, sift each portion into the bowl of egg yolks. Mix until the batter is fully incorporated, smooth, and glossy.

Step 5: In a bowl containing the egg whites, add a pinch of salt. Using a hand mixer at medium speed, beat until large bubbles form, then add cream of tartar. Continue beating until the bubbles become smaller, resembling soap bubbles, then gradually add 20 grams of sugar while increasing the mixer speed to high. Beat until the egg whites are nearly stiff.

Step 6: Gently fold the beaten egg whites into the bowl containing the egg yolk mixture until well combined.

Step 7: Allow the batter to rest for about 10 minutes, meanwhile preheat the waffle maker.
Baking the waffles:
Step 8: Use a brush to apply a thin layer of butter on both sides of the waffle iron. Pour the batter evenly onto the iron, close the lid, and cook for about 5 - 7 minutes. At the 4-minute mark, you can open the waffle maker and check if the waffles are golden brown to your liking. If not, you can cook for a few more minutes.
