• Lime and chili

• Seasonings: fish sauce, table salt, sea salt, MSG, sugar, cooking oil

GUIDE TO PREPARE SOUTHERN-STYLE SOUR FISH SOUP
Step 1. Prepare the fish
Clean and cut the fish into slices. Rub the fish with a pinch of sea salt and lime, then rinse thoroughly to remove any fishy smell.
Marinate the fish with a bit of fish sauce, seasoning powder, and finely chopped ginger and garlic for about 10 minutes.

Step 2. Prepare other ingredients
Soak tamarind in hot water, mash it, and strain to extract tamarind essence.

Peel and clean water spinach, wash it with diluted saltwater, and diagonally slice it.

Peel the pineapple, remove the eyes, wash it thoroughly, and cut it into small pieces.

Clean bean sprouts and let them drain.
Wash and cross-cut corn kernels.

Clean tomatoes and cut them into wedges.
Clean various herbs and chop them finely.

Step 3. Fry the fish
Heat oil in a pan, sauté garlic until fragrant and golden, then remove and set aside.

Continuously fry the fish on both sides to firm up the flesh without it becoming fishy. Set aside on a separate plate.

Step 4. Cook the soup
Bring 1 liter of water to a rolling boil, add tamarind essence, season with a teaspoon of salt, 2 tablespoons of fish sauce, and 1 tablespoon of sugar. Stir well and simmer until boiling.

Add the fried fish and garlic from earlier. Simmer for about 5 minutes.

Add pineapple, water spinach, corn, and tomatoes. Simmer over low heat for approximately 5 minutes.

Add bean sprouts. Turn off the heat when the soup boils again.
Note: Regularly skim off any floating foam to keep the soup clear and more visually appealing.
Step 5. Presentation
Scoop the soup into a bowl, sprinkle with fried garlic, fresh herbs, and some slices of chili if desired.
