1. Green Bean Mooncake Recipe
Ingredients for Green Bean Mooncakes
- 150 grams of green beans
247 grams of all-purpose flour
20 grams of peanut butter
Steps to Make Green Bean Mooncake Filling
Step 1: Prepare Ingredients
Soak cleaned green beans in water for about 2 hours until soft. Then, boil them until tender for approximately 20 minutes.
Step 2: Process Green Bean Filling
Transfer the boiled green beans into a blender and blend until smooth.
Next, pour the smooth green bean paste into a non-stick pan, add 100 grams of sugar, and 1/2 teaspoon of salt. Stir well.
Simmer the mixture over low heat, then add 2 tablespoons of coconut oil and continue stirring until the filling becomes sticky.
Mix 1/2 tablespoon of flour with 2 tablespoons of water until dissolved. Then, pour the flour mixture into the filling pan. Continue simmering over low heat until the filling thickens. Test by rolling a small amount without sticking to your hands.
Step 3: Mix the Dough
Sift the prepared flour into a large bowl. Add 160 grams of sugar syrup, 30 ml of vegetable oil, 20 grams of peanut butter, and 1 egg yolk.
Then, use an electric mixer to blend the mixture together. Next, knead the dough by hand until it becomes smooth and non-sticky.
Wrap the dough in plastic wrap and let it rest for about 30 – 45 minutes.
Step 4: Wrapping the Filling
Divide the dough into equal portions, each about 42 grams, then roll them into balls. Similarly, shape the green bean filling into balls.
Next, lightly dust your hands and a clean surface with dry flour to prevent sticking. Place a dough ball on the surface and use a thin rolling pin to flatten it into a circle, doubling the diameter of the filling.
Note: Do not roll the dough too thin as it may tear easily and make it difficult to wrap the filling.
Then, place the filling ball in the center of the dough circle and pinch the edges to seal, enclosing the filling. Gently shape it into a round, neat mooncake.
Place the mooncakes on a tray and cover them with a clean, damp cloth to prevent drying out. Continue this process until all ingredients are used.
Step 5: Sealing the Mooncake
To prevent sticking, lightly coat the mold with a thin layer of vegetable oil, sprinkle a thin layer of flour on the bottom, place the smooth side of the mooncake into the mold, and press firmly to create the shape.
Now you have a beautifully patterned mooncake.
Step 6: Baking the Mooncakes Using Air Fryer
Before baking, preheat the air fryer to 150°C for 10 minutes.
While waiting for the air fryer to heat up, take 1 egg yolk and 4 teaspoons of milk, put them in a bowl, and mix well.
After 10 minutes, remove the air fryer basket, line it with parchment paper to prevent sticking. Then, arrange the mooncakes in the basket and bake at 150°C for 5 minutes.
After 5 minutes, take out the mooncakes, let them cool completely, then use a brush to apply a thin layer of the prepared mixture all around the mooncakes.
Place the mooncakes back on the tray, continue baking for the second round at 150°C for 5 minutes.
After 5 minutes, let the mooncakes cool, then flip them over and bake for the third round for 5 minutes at the same temperature to complete the air fryer mooncake making process.
2. Finished Product
Green bean mooncakes will be softer and tastier if you let them sit overnight. When eating the mooncakes, you will enjoy the soft outer layer blending with the smooth green bean filling.
