If you want to get fancier, you can prepare various sauces for dipping, different toppings, or add various fillings... ensuring that your bakery will be one of the top spots in Hanoi.

Ingredients for making the cake:
- 500g all-purpose flour
- 20g powdered milk
- 210ml warm milk (40 degrees Celsius)
- 7g active dry yeast
- 100g sugar
- 3g salt
- 35g melted butter
- 1 chicken egg
Step-by-step guide on how to make donuts
Step 1. Mix together all-purpose flour, powdered milk, salt, sugar, active dry yeast, and melted butter

Step 2. Knead the dough. If you have a mixer, you can use it. If not, knead by hand until the dough is not sticky

Step 3: Let the dough rise until doubled in size

Step 4: After the dough has risen enough, punch it down to release air bubbles. Roll out the dough to 1-1.2cm thickness, then use a cutter or ring to cut the doughnuts, or divide the dough into small balls using an egg-sized portion

Step 5: Shape the dough as shown in the image

Step 6: Let the dough rest for 15 minutes, then fry

Step 7: Fry until golden brown.
The frying temperature should be at a medium heat. High heat will quickly brown and burn the crust, while low heat will result in slow or insufficient rise. If you don't have a high-temperature thermometer, you can adjust the heat based on the appearance of the dough. The dough should puff up and turn golden within about 30 - 40 seconds for small doughnuts, 40 - 60 seconds for larger ones. I set it to about 3 - 4/6 (on an electric stove).
Avoid frying too many doughnuts at once, as it may cause the temperature to drop significantly below the required level.

Step 8: Remove the cooked doughnuts and let them drain excess oil. You can dip them in chocolate sauce, sprinkle powdered sugar, or any topping of your choice.

The best way to enjoy these doughnuts is to serve them hot right after frying (and after they've absorbed excess oil). You can sprinkle powdered sugar or make a honey lemon glaze like this:
• 45 grams of powdered sugar
• 15 ml of golden lemon extract
• Zest of 1 golden lemon finely grated
• 10 grams of honey
Mix all the ingredients well and pour or spread onto the doughnuts. This glaze has a mild tangy flavor and a fragrant zest of lemon, giving the doughnuts a sweet and tangy taste without being overwhelming. If you want to achieve a clear white sugar layer on top of the doughnuts like those in bakeries, you'll need to increase the amount of powdered sugar (it will look nicer and be much sweeter).
The doughnuts can be consumed within approximately 8 hours after frying (store them in a sealed bag/box).
Do not leave them overnight for the next day.
