These days, there are many types of mooncake fillings with different flavors. However, green tea mooncakes are preferred for their fresh green color and refreshing taste. Instead of buying ready-made mooncakes, you can easily try your hand at making deliciously chewy green tea mochi at home. The process of making green tea mochi is simple and doesn't take much time at all. Check out the detailed recipe below.
1. Ingredients for Making Green Tea Mochi

- Green tea powder
- Mochi flour
- Pomelo essence
- Lime
- Cooking oil
- Sugar
- Salt
- 250g mung beans
2. Simple Homemade Green Tea Mochi Recipe
Step 1: Making the Mochi Syrup
- Pour 350ml water and 0.5kg sugar into a pot. Add juice from 1/2 lime. Place the pot on the stove and bring to a boil without stirring, allowing the sugar to dissolve completely.
- After the syrup boils, simmer for an additional 5 minutes, then turn off the heat and let it cool.
- Making mochi syrup isn't too difficult but requires precision and skill. Note that you shouldn't stir the syrup while cooking to prevent crystallization.
Step 2: Making green tea mochi filling
- Soak mung beans in cold water for about 3-4 hours until soft and evenly swollen. Alternatively, soak in hot water for 1 hour.
- Place the steamer over the stove and steam the soaked mung beans until they swell evenly. Once they're fully swollen, transfer the beans to a bowl to cool.
- If you have a microwave, place the soaked mung beans in a microwave-safe glass container along with 1/2 teaspoon of salt and enough water to cover the beans. Mix well, cover the container tightly with food wrap, and microwave on high for 10 minutes. This method makes the green tea mochi process much faster.
- Put the cooked mung beans in a blender, add 120g of sugar, and blend until smooth. If your blender doesn't have a meat blending function, remember to add water while blending to avoid jamming.
- If you don't have a blender, you can use a spoon to mash the cooked mung beans until smooth.

Mung Bean Filling for Mooncakes
- Next, prepare the mung bean filling. Use a dry pan to roast the mung beans with 40ml of cooking oil and 1 teaspoon of pomelo essence. Roast until the beans don't stick to the pan.
- Divide the beans into 2 portions, add 2 teaspoons of green tea powder to one of the portions and mix well. Then shape the beans into small balls.
Step 3: Making the green tea mooncake outer crust
- The next step of making green tea mochi mooncakes is preparing the crust. Add 600g of syrup and 1 teaspoon of pomelo essence (essential for the right flavor) along with green tea powder into a bowl and mix well.
- Next, gradually sift 200g of mochi flour into the syrup bowl to prevent clumping. Gently mix until the mixture remains loose and not thick like a lump of dough. Let it rest for 15 minutes after mixing.
Step 4: Assembling green tea mooncakes
- Spread the dough on a table, bring the dough lump from the bowl to knead evenly, then divide the cake coverings in a ratio of 2 parts covering and 1 part filling. Then thinly spread the divided dough portion.
- Put the filling into the dough, fold the edges together, shape it into a round ball, making sure the dough doesn't stick to your hands completely to avoid sticking when putting it into the mold. Then place the cake into the pre-dusted mold. Press the cake firmly with your hand, then remove it from the mold.
