Simple Way to Cook Authentic Giang Leaf Chicken Hotpot at Home

Method:
Step 1: Prepare the ingredients
Firstly, prepare the chicken by rubbing a layer of salt and ginger on the outside to eliminate any gamey smell after cooking. Then, rinse thoroughly and drain.
To enhance the flavor of ginger leaf chicken hotpot, marinate the chicken for 20-30 minutes before cooking. Adjust the amount of salt, sugar, and seasoning according to taste. Additionally, you can add a pinch of pepper for extra aroma while cooking the hotpot.
Clean the morning glory, remove the leaves, and cut into bite-sized pieces. Peel and slice the mint stems. Clean the tomatoes, cut into quarters, or halve depending on the size of the fruit.
Clean and finely chop the garlic and chili.
For the ginger leaves, simply discard the tough stems or overly mature leaves, lightly crush. Then, wash the ginger leaves with diluted salt water and drain. To bring out the distinctive flavor of ginger leaves, you can gently squeeze some leaves.
If using tamarind, blanch briefly in boiling water once, then continue to soak in boiling water to extract all the sourness. Use a strainer to remove the residue and tamarind seeds, keeping only the sauce.

Step 2: Cook the chicken leaf hotpot
- Heat oil in a deep pan, then sauté garlic and chili until fragrant. Next, add the marinated chicken and stir-fry until firm, then turn off the heat.
- Bring a pot to boil with about 500-600ml of water. Once boiling, add the tamarind sauce, previously stir-fried chicken, and the giang leaves. You can season to taste before turning off the heat.
- Arrange morning glory, spearmint, tomatoes, and noodles on separate plates. Prepare a dipping sauce such as fish sauce or chili salt, salt, and pepper according to preference.
- When serving, consider adding a little fried garlic on top of the chicken leaf hotpot to enhance the flavor.
