Quick and Simple Soy Sauce Braised Eggs
Ingredients:
- 4 eggs
- 20g chives
- Spices: green onions, garlic, chili, salt, sugar, soy sauce, seasoning granules, etc.
Instructions:
- To make delicious soy sauce braised eggs, select fresh eggs by gently shaking them; minimal movement indicates freshness.
- Boil about half a pot of water, ensuring eggs are fully submerged. Add eggs when water is still cold to prevent cracking. Boil for 6-7 minutes for soft-boiled or 8-9 minutes for firmer yolks.

- Note: Once eggs are cooked, transfer them to a bowl of cold water to reduce temperature and facilitate peeling.
- Continue boiling approximately 500ml of water with 2 teaspoons of granulated sugar and soy sauce. Season to taste. Add peeled eggs, ensuring even absorption. Simmer over low heat until the eggs have a brownish-yellow hue.
- Just before turning off the stove, add finely chopped garlic, minced chili, sliced green onions, and chopped chives for the finishing touch to the soy sauce braised eggs.
