If you've ever been to Phủi Quán for drinks, chances are you've heard of their famous dishes like Grandma's trotters, Sun-drunk birds, Supernatural chicken feet,... and the eggplant stuffed with meat that I'll introduce the recipe for below.
One of the main reasons Phủi Quán has maintained its reputation as a top-notch drinking spot since its establishment is its consistently innovative and delicious menu, which appeals to both office workers and students alike. The food here is inventive, mouthwatering, and affordable.

Or Phủi is also the only place I've ever tried a black companion crab hot pot, combining the rich flavor of genuine field crab with black garlic - a highly prized type of garlic known for its numerous medicinal properties. It's rich, flavorful, and absolutely mesmerizing, all while being incredibly good for health.

Indulge in the exquisite taste of tender meat stuffed inside crispy eggplant, infused with the aromatic blend of ginger, and bathed in a rich, savory sauce. Perfect for a chilly evening, this dish is a culinary delight that pairs wonderfully with rice and a glass of wine.
Gather the Ingredients
+ 100g of meat, 2 eggplants, 1 duck egg, 2 sprigs of finely chopped chives, a small amount of ginger peeled and minced
+ A pinch of salt and black pepper, each, 1 teaspoon of cold water.
To create the sauce for your dish, combine cornstarch, water, soy sauce, sesame oil, and sesame seed oil, each 1 tablespoon, 2 tablespoons of flour, a pinch of salt and sugar, 2 teaspoons of white wine, ½ teaspoon of vinegar, ½ egg, 3 finely chopped chili peppers, 3 minced garlic cloves, and 1 sprig of finely chopped chives.

You can choose to make your meat-stuffed eggplants with or without sauce according to your taste preference
Mix finely ground meat with ginger, egg, salt, and chives for about 10 - 15 minutes.
Slice eggplants into thick rounds about 2cm in thickness. Make a deep slit about 2/3 of the diameter of each round, leaving the remaining 1/3 intact. After slicing, immediately soak each round in a bowl of diluted saltwater to keep them white, crispy, and prevent discoloration.
Carefully stuff the seasoned meat between two slices of eggplant, ensuring the meat quantity is sufficient to prevent the eggplant from breaking or bursting.

Press the meat filling skillfully to avoid the eggplant from splitting or bursting!
Crack eggs into a bowl, mix thoroughly with flour and cornstarch to prevent clumping, dip each meat-stuffed eggplant into the mixture to coat evenly with a layer of batter.
Heat oil in a pan, then gently fry the battered eggplant pieces over medium heat until golden brown on both sides. Remove from the pan and drain excess oil.
