How to make duck and onion salad
Step 1: Prepare the ingredients for making duck and onion salad
- Wash the duck meat thoroughly, then rub with white wine, sliced ginger, and crushed mosquitoes on the duck meat for about 5 - 10 minutes to remove the fishy smell. Then rinse again with water and drain.
- Peel and slice the onions into round pieces, then soak them in a bowl of cold water for 10 - 15 minutes to make them firm and less pungent. Afterward, remove, rinse, and mix with a little lime juice, 3 tablespoons of sugar, marinate for 15 minutes to allow the onions to absorb the flavor, then drain.
- Peel the carrots and green mangoes, then wash and shred them into small pieces. Next, put them in a bowl and mix with a little lime juice, 2 tablespoons of sugar, toss well to marinate for 15 minutes.
- Clean and wash the coriander, mint, and basil leaves, then drain them.
- Wash the lime leaves and drain them, then thinly slice them into small pieces.

Step 2: Boil and marinate the duck meat
- Put a pot on the stove, add about 500ml of water to the pot and a pinch of salt, then add the duck and boil until boiling. When the water boils, skim off the foam to make the broth clear and fragrant.
- Boil until the meat is cooked. Check by skewering the duck meat with a fork. If you see red-colored water, the meat is not cooked yet. But if the water is clear, then the meat is cooked. Turn off the heat and remove the meat.
- Rinse the duck meat with clean water, then soak it in ice water to make the meat crispy and prevent it from turning dark
- Soak the meat for about 15 minutes, then remove it and use a knife to separate the meat from the bones. Tear the meat into small, evenly-sized pieces, and place them in a separate bowl
- Prepare a small bowl for the lime juice, 2 tablespoons of sugar, 1 tablespoon of fish sauce, and 1 tablespoon of soup powder. Then mix the duck meat with the seasoning mixture for marination
