Ingredients:
– 500g catfish
– Seasonings: cooking oil, fish sauce, sugar, oyster sauce, sesame oil, pepper, chili powder...
– 100ml coconut water or boiling water
– Shallots, garlic, Vietnamese coriander

Method
Step 1: Prepare the Ingredients
– After purchasing the catfish, ensure it is cleaned by rubbing salt on it to remove the slime, trimming the mouth, fins, and tail, then rinsing it several times with water. Next, prepare a bowl of water mixed with 2 tablespoons of vinegar, soak the fish in it for 5 minutes to completely remove the slime. Then marinate the catfish with a little food coloring, 1 teaspoon of salt, ½ teaspoon of sugar, 1 teaspoon of fish sauce, and a pinch of pepper for about 30 minutes to allow the fish to absorb the seasoning.
