Female sams weigh over a kilogram, while males weigh only half as much as females.
Sams are distributed in coastal areas, living along sandy stretches in regions with high tides. They live in pairs, build nests, and live together for life.
Sam is known for its unique flavor, requiring meticulous preparation from cleaning to seasoning. It demands dedication from chefs who must pour their hearts into each dish. Sam dishes are meant to be savored hot; losing heat means losing flavor.
The people of Quang Yen have ingeniously transformed sam into a specialty with 7 – 8 dishes such as sam jelly, sam soup, stir-fried sam with bamboo shoots, sweet and sour stir-fried sam feet, fried sam thighs, sam sausage, pressed sam eggs, and sam vermicelli. Each dish carries its own distinct flavor, with sam jelly being particularly exquisite.
For the sweet and sour stir-fried sam feet, the ankle part is chopped into bite-sized pieces and soaked in hot water. Then it is marinated with chili, lemongrass, and galangal for 10 minutes. Next, it is stir-fried with garlic and simmered over low heat in a thick sauce with a balanced sweet and sour taste from fish sauce, tamarind juice, and chili.
The sam meat salad is also a popular choice among diners. Sam meat is minced, steamed until cooked, then finely shredded and mixed with cucumbers, carrots, thinly sliced lotus stems, peanuts, chili, and herbs... All ingredients are mixed with a spicy and sour fish sauce, ready to be enjoyed after 10-15 minutes.
