Ingredients for Fried Goat Meat:
Goat meat: 500 grams
Lemongrass: 3 stalks
Red bell pepper: 1 fruit
Dried shallots: 2 bulbs
Ginger: 1 small bulb
Fish sauce
Fermented rice: 2 tablespoons
Coriander seeds: 1 teaspoon
Toasted sesame seeds: 2 teaspoons
Assorted accompanying greens: Gynura, basil, coriander
Seasonings: Seasoning powder, oyster sauce, cooking oil, MSG
Recipe for Fried Goat Meat
- Lemongrass: peel off the tough outer layers, wash thoroughly, pound lightly, finely chop
- Ginger: peel off the skin, wash well, pound lightly, finely chop

- Dried shallots: peel off the skin, finely chop
- Coriander seeds: toast until fragrant then crush into small pieces
- Wash the chili peppers thoroughly, thinly slice

- Prepare accompanying greens, wash and drain well

- Clean the goat meat, cut into small pieces, mix with ginger, lemongrass, dried shallots, coriander seeds, fermented rice, 1 teaspoon of seasoning powder, ½ teaspoon of MSG, 1 tablespoon of oyster sauce, and marinate for about 15 - 20 minutes to absorb flavors
- Heat oil in a pan until hot, then add the goat meat. Stir frequently to prevent burning. Fry in batches to maintain optimal temperature and prevent meat from releasing excess moisture. Rotate evenly to ensure even cooking. Do not overcrowd the pan as the oil temperature may drop, resulting in less flavorful meat.
