Ingredients for Fresh Spring Rolls:
- Rice vermicelli: 600 grams.
- Fresh shrimp: 300 grams (medium size).
- Pork belly: 300 grams.
- Eggs: 2.
- Carrot: 1 piece.
- Cucumber: 1 piece.
- Seasonings include: seasoning powder, fish sauce, cooking oil, sugar, chili powder.
- Lime: 1 piece.
- Herbs: 150 grams, young cabbage 150 grams, lettuce 200 grams, coriander 100 grams.
- Rice paper: 1 pack for rolling rice vermicelli (about 50 pieces).
- Ingredients for fish sauce dip: 70ml fish sauce, 60 grams white sugar, 40ml lime juice, 1/2 tablespoon minced garlic, 1/2 tablespoon minced chili.
How to Make Shrimp and Pork Fresh Spring Rolls:
- Step 1: Preparation
- Fresh shrimp: Rinse thoroughly, place in a pot, add water and a pinch of salt, then steam until cooked. Once cooked, remove and drain.

- Pork belly: Wash thoroughly, boil until cooked. Once cooked, remove the pork and soak it in ice water to make it whiter and crispier.
- Eggs: Crack the eggs into a bowl, beat well. Heat cooking oil and spread the beaten eggs thinly.
- Fresh vegetables: Clean and pick the leaves, discard old and wilted parts, then wash thoroughly and pat dry. Separate lettuce leaves and chop finely. Keep each type of vegetable separate for easy rolling later.
- Cucumber: Cut off both ends, then wash thoroughly, cut in half, remove seeds, and slice into long pieces about 5cm in length.

- Carrot: Peel, slice into thin strips, mix with sugar, then squeeze out excess water.
Step 2: Making Lime Garlic Chili Fish Sauce Dip for Fresh Spring Rolls
- Mix fish sauce, sugar, lime juice prepared with 80ml of water in a bowl, stir well until sugar dissolves, then add minced garlic and chili.
Note: You can mix sugar and lime with clean water beforehand to create a sweet and sour sauce, then gradually add fish sauce until it reaches the desired taste. The smaller the minced garlic and chili, the better they will float on top, very visually appealing.

Step 3: Rolling the Fresh Spring Rolls
- Shrimp: Peel off the shells, then remove the black thread along the back of the shrimp. If the shrimp is large, split it in half lengthwise.
- Pork belly: Slice thinly across the grain to avoid tough meat.
- Rice paper: Cut into very fine strands

- Spread rice paper on a wide tray, layer lettuce, followed by raw vegetables, herbs, and rice vermicelli.
- Place the meat and shrimp on the outer edge.
- Fold in 2 sides of the rice paper, hold tightly with your hand, and roll it up.

Step 4. Presentation on a Plate
Arrange the fresh spring rolls on a plate to make them visually appealing. You can garnish with lettuce, tomatoes, chili, carrots, etc.
