The other day, I treated my family to a dish of vinegar-dipped beef with spicy fish sauce, and they all loved it. This dish is simple to make, flavorful, and the dipping sauce is the highlight.

Ingredients for making vinegar-dipped beef:
1 kg beef (choose beef sirloin)
100 ml vinegar
250 ml coconut water
1/2 ripe pineapple
1 kg fresh vermicelli noodles

10 grams chili peppers

How to make vinegar-dipped beef:
Step 1: Marinate the beef - Preparation
Thinly slice the beef, flatten, tenderize (with plenty of black pepper), finely chop lemongrass. Slice the green banana thinly, soak in vinegar to whiten; soak the star fruit in salt water, slice the pineapple, cucumber thinly for easy rolling.

Step 2: Make fish sauce dip
Make fish sauce dip: 5 lemongrass stalks, 1 bulb of garlic, 4 finely chopped chili peppers. Sauté a bit of garlic first until fragrant with cooking oil then add all lemongrass + garlic + chili into the pan and stir-fry until golden. Take 1 bowl of fish sauce dip or (can be bought at the supermarket) mixed with half a bowl of distilled water and pour into the boiling pan, skim off the foam. Add 2 tablespoons of sugar. Remove from heat and let it cool. Finely chop ripe pineapple, or grind it, when the fish sauce is still warm, add it in. The fish sauce will become sticky and aromatic.

Step 3: Dipping Sauce
The dipping sauce consists of: 250ml coconut water (about 1 fruit), 100ml vinegar, 1 tablespoon sugar, 1 teaspoon broth powder, 2 smashed shallots, 1 onion cut into wedges, a few pieces of ripe pineapple (sliced) for fragrance. Boil until the mixture is dissolved and well blended with spices.

Step 4: When dining, place the immersed water pot on the induction cooker, boil it, dip the beef until medium rare. Serve with fresh vegetable rolls, banana, starfruit, pineapple, cucumber, along with the beef, noodles, dipping in fish sauce, and enjoy.
