1. Hanging Stove Snails
The most unique hanging stove snails are the lac snails. Prepare for a gathering by thoroughly cleaning the snails, then place them in a container containing beaten chicken eggs for them to drink; as the snails hear the water, they begin to move, opening their mouths and extending their tentacles to drink.

After about 20 minutes, when the snails have finished drinking, pick up each snail by its tail and place them in a pot with a layer of lemongrass, a pinch of salt, and a little water. Simmer for about ten minutes until boiling, and the snails have opened their mouths. Stir the pot of snails back and forth a few times for even cooking, then let it simmer for a few more minutes until the snails are cooked. Enjoying hanging stove lac snails must be done slowly, as the meat is tender, plump, sweet, spicy from the chili, and fragrant from the lemongrass.
