How to Make Thai-Style Pineapple Fried Rice
Step 1: Prepare the Pineapple Bowl
To present the pineapple fried rice dish, we need an empty hollowed-out pineapple.
First, halve the pineapple and score the flesh with diagonal cuts as shown, then scoop out the pulp. Note: Discard the pineapple core.
Cut the pulp into small pieces and set aside in a bowl for frying with the rice.

Step 2: Prepare the remaining ingredients
Peel and devein the shrimp, remove the heads and black vein along the back. Use a knife to make a shallow cut along the back of each shrimp. Rinse the shrimp with salt water. Marinate the shrimp with a pinch of salt and pepper.

Slice the cold cuts thinly

Peel and dice the carrot and onion
Wash the green beans with water, blanch quickly in boiling water.

Crack the eggs into a bowl, beat well with a pinch of salt, MSG, and fish sauce.

Step 3: Fry the rice
Heat the oil in a pan, add the beaten eggs, stir until the eggs are scrambled. Stir for about 1 minute until the eggs are cooked, then transfer to a separate plate.

Heat the oil in the pan again, stir-fry the shrimp, when the shrimp turns pink, transfer to a plate.

Turn the heat back on, add the cold cuts to the pan, add the diced onions, sauté until fragrant.

Add the diced carrots and sliced cold cuts, stir-fry for about 1-2 minutes.

Add the rice to the pan, mix well.

Once the ingredients are evenly stir-fried, add the green beans, 1 tablespoon of fish sauce, 1 tablespoon of soy sauce, ½ teaspoon of pepper, 1 teaspoon of sesame oil, the eggs, and the shrimp.

Fry for a few minutes until the ingredients are well combined.
Turn off the heat, add the spring onions and pineapple, toss together for 1-2 minutes.

Serve the rice into each pineapple bowl, and you're done!
