Nam Pho village, located about 4km from the city of Hue, is enriched by the fertile sediment deposited by the Huong River annually, resulting in rich and fertile soil, lush vegetation, and abundant aquatic resources. Therefore, Nam Pho soup noodles made with shrimp harvested from the Chuon and San lagoons boast tender and succulent meat.

The flour used to make the soup noodles differs from that used in other regions. The flour is mixed in a ratio of 3 parts rice to 1 part cassava, then steamed using a water bath. Once the dough becomes sticky, it is wrapped in plastic film, cut into sharp strands, and kneaded into boiling water.

The cook knows it's time to remove the noodles when they turn opaque white, begin to firm up, and become chewy. They are then scooped out and rinsed with clean water. The resulting dough is smooth, round, non-sticky, and beautifully white, ready to be used for the soup noodles dish.
