To put it simply, this cheesy ribs dish is so delicious that every time Rome Deli comes up in conversation, I urge people to try this dish first. However, sometimes you crave cheesy ribs at home but hesitate to grill them. So, I've found a way to make this dish without the hassle of grilling, and I'm sharing it with you so you can treat your family to a fancy meal at the end of the year!
Preparing ingredients for 1kg of tender ribs
+ 100g Mozzarella cheese, a few bay leaves, half an onion, 15g black peppercorns, water
+ 30g sugar, 30g minced garlic, 90g Korean chili powder, 60ml soy sauce
+ Salt, spring onions, ground pepper

This is how the finished product looks, folks!
Step 1: Prep and wash the ingredients. Place the ribs, onion, bay leaves, and black peppercorns in a pot, cover with water, and simmer until the ribs are cooked. Remove the ribs, cut into small pieces, then marinate with garlic, sugar, chili powder, and soy sauce. Add some salt, ground pepper, and about 80 – 100ml of the previously simmered rib broth for 15 – 30 minutes.

Grill ribs without the need for grilling!
After marinating thoroughly, pour the mixture into a preheated pot on the stove, reduce heat and simmer while stirring until the sauce reduces and coats the ribs evenly, achieving a beautiful golden brown color.
Place a small skillet on the stove, arrange the diced mozzarella cheese in one side, sprinkle some finely chopped spring onions, arrange the ribs on the other side, turn on the stove until the cheese melts and blends with the ribs, then turn off the heat and enjoy.

When the cheese melts, it's time to dig in and make sure it's hot!
Note that this dish must be eaten quickly, while it's still piping hot for the tender ribs and aromatic cheese. It's most delicious when everything is harmonized, so whenever you visit Rome Deli for this dish, even the staff remind me of this because they're afraid I might get too engrossed in checking in and end up with a cold dish!

Rome Deli's salmon and shrimp pizza is also a must-try!
