INGREDIENTS FOR TRÙNG KHÁNH SPICY SOUR MIEN
• 3 tablespoons of roasted peanuts
• 100g of dried mien noodles
• 1/4 cup of pickled radish, finely chopped
• A handful of green onions, cilantro finely sliced
Broth:
• 2 1/2 cups of chicken broth, 1 slice of ginger (finely minced), 2 cloves of garlic (finely minced), 1 teaspoon of toasted sesame seeds, 1 teaspoon of Sichuan chili powder or regular chili powder, 3 tablespoons of vegetable oil, 2 tablespoons of vinegar, 2 tablespoons of soy sauce, 1 tablespoon of sesame oil, 1/2 teaspoon of sugar, 1/2 teaspoon of toasted Sichuan peppercorns, 1/4 teaspoon of white pepper, 1/2 teaspoon of sesame oil
PREPARATION STEPS FOR TRÙNG KHÁNH SPICY SOUR MIEN
Step 1. Gather the ingredients
Chop the green onions and cilantro finely after washing them thoroughly
Crush and mince the ginger and garlic
Finely chop the pickled radish in a pomegranate seed style.

Step 2: Blanch the mien
Bring a pot of water to boil, blanch the mien for about 1 minute. Rinse with cold water, drain, and portion into individual serving bowls.


Step 3. Prepare the broth
Heat chicken broth in a separate pot. Keep it on low heat. If you don't have broth, you can use hot boiling water.

Place ginger, garlic, toasted sesame seeds, and peppercorns in a bowl.

Heat 3 tablespoons of cooking oil until it shimmers and releases a light smoke. Pour it over the ingredients in the bowl. The hot oil will cook the ingredients and release aromatic flavors.

Stir the ingredients well and add vinegar, soy sauce, sugar, Sichuan peppercorns, white pepper, sesame oil, and chili oil.

Pour broth into the bowl and mix well.

Step 4. Presentation
Pour the prepared broth over the mien bowl, adding pickled radish, green onions, cilantro, and roasted peanuts on top.
Season to taste and adjust if necessary. Enjoy immediately!
