Gather the following essentials for the culinary journey:
Prepare 800g of bull snails (whelks).
Gather 200g of pork belly slices.
Obtain 3 sheets of tofu.
Acquire 50g of turmeric.
Include leaves of perilla and betel.
Use 5 unripe bananas.
Prepare ½ a bowl of rice yeast.
Add 1 teaspoon of shrimp paste.
Lime, chili, salt, vinegar
Dried shallots, garlic
Rice washing water (for soaking snails)
Lime leaves, lemongrass
Note: Choosing larger snails enhances the flavor.
How to Cook Snail Stew with Bananas and Tofu:
Step 1:
- Soak the snails in rice water or lukewarm water with finely chopped chili for about 30 minutes. This helps the snails release any impurities.
After soaking, thoroughly rinse the snails under running water.
Use a knife to cut the buried part of the snail, then pry open its mouth and remove the innards. Discard excess intestines.
Once done, massage the snail meat with salt and vinegar to remove all slime. Rinse again with water.

For large snails, slice them into bite-sized pieces and marinate with a teaspoon of salt, minced onions, and garlic.

Step 3:
Clean the pork belly thoroughly, cut into bite-sized pieces, then grill or roast until crispy on the edges.
Dice the tofu into small squares, then fry until golden and crispy.

Combine the cooked pork belly and green bananas in a pot, season with spices to taste, then add fermented rice water, shrimp paste, and turmeric water. Add a little water to cover all the ingredients.

Cover and simmer until boiling, then reduce heat. Cook until the bananas are soft, then add the fried tofu and simmer for a while.
Next, add the snails and season to taste.
Bring to a boil again, then add perilla leaves and betel leaves, stir evenly with the ingredients, and turn off the heat.
