Blessed with an insatiable appetite but fortunate enough to stay trim, I've wandered through countless buffets, hot pots, and grills in Hanoi. From Korean and Japanese to Singaporean, Chinese, Thai,... you name it, I've tried it all. Through this gastronomic journey, one revelation stands out – the sauce plays a crucial role in elevating the flavors of fried and grilled dishes.

In my most recent visit to the Korean barbecue buffet Sariwon on Nguyen Khanh Toan, the array of ingredients—American and Australian beef, chicken, pork, octopus, oysters, shrimp, squid, fish, ostrich, and more—was vast. How do you transform them into a buffet with over a hundred different dishes?
Sauce defines up to 80% of the flavor in grilled dishes. Take, for example, Sariwon's American beef. Despite being the same meat, Teriyaki sauce imparts a light, subtle taste, while Bulgogi sauce is rich and flavorful down to each meat strip. Whether it's Wangyan sauce, Galbi sauce, garlic sauce, salt sauce, spicy sauce, or Sariwon's custom-made sauce, each brings a completely different flavor to the table.

Sariwon truly knows how to 'transform' dishes with sauces
Perhaps my most impressive experience with Sariwon lies in their ability to transform a variety of dishes with just a touch of their sauce—truly a case of 'each dish has its own unique charm.' When you get the chance, visit Sariwon to witness the magical touch of their sauces that revitalizes grilled dishes to an extraordinary level. But first, while mango season is still here, let me share with you a delicious and easy-to-make dish I learned from Sariwon—mango-infused chicken, a dish so good it's worth every grain of rice!

Mango-infused chicken, rich and flavorful, perfect with rice
Prepare the ingredients:
+ Mango sauce preparation: ½ onion (finely diced), 1 chili pepper (seedless, minced), carrots, celery, salt, 30g sugar, 60g unsalted butter, 85ml tomato sauce, 15ml soy sauce, 480ml mango juice
+ 900g chicken thighs, 2–3 eggs, all-purpose flour, chili powder, salt, ground pepper, cooking oil
First, heat a pot, add butter, melt it, then sauté onions and chili for about 5 minutes until softened, reducing any pungent smell. Season with salt for richness.
Remove sugar, add tomato sauce and mango juice, mix well, and simmer for about 5 minutes. Once it starts boiling, reduce heat, cover, and simmer for another 5 minutes. When the mixture cools, blend it until smooth. Simmer on low heat again until the sauce thickens, then turn off the stove.

Make mango sauce
Debone and cut the chicken thighs into bite-sized pieces. Crack the eggs into a bowl and beat them evenly. Mix flour, salt, pepper, and chili powder in another large bowl.
Roll the chicken through the flour, dip it into the egg bowl, then roll it through the flour again to ensure an even coating. Fry in hot oil for about 5-6 minutes until the chicken starts turning golden brown. Remove the chicken, drain excess oil, and toss it in the mango sauce pot, ensuring an even coating before serving hot with rice or bread—delicious! This dish has a delightful sweet and spicy taste, complemented by the crispy outer layer and the tender, juicy, and flavorful chicken inside.

The first time I tried this mango sauce dish at Sariwon, I was instantly hooked.
