For the sauce
• 2 tablespoons oyster sauce, 1 tablespoon soy sauce, 1 tablespoon fish sauce, 1 tablespoon brown sugar
• 4 to 6 cloves of garlic, finely chopped
• Juice of 1 lime, squeezed for 2 tablespoons of juice
• 1 red chili, finely chopped
For the stir-fry:
• 12 to 15 medium to large-sized shrimp
• 2 to 3 tablespoons cooking oil
• 1 lime for garnish

STEPS TO MAKE THAI-STYLE GARLIC SAUTÉED SHRIMP
Step 1. Prepare the shrimp
Peel and devein the shrimp, removing the heads, legs, and the black vein on the back. Make a shallow slit along the back of the shrimp to allow them to curl nicely when cooked. Rinse the shrimp with salted water and drain well

Step 2. Prepare other ingredients
Wash and finely chop the coriander
Remove the stem of the fresh chili, finely chop
Squeeze lime for juice, reserve some for garnish by cutting into slices or wedges.

Step 3. Prepare the sauce
Combine oyster sauce, soy sauce, fish sauce, brown sugar, garlic, lime juice, and chili in a bowl. Stir well until the sugar is completely dissolved.
Taste the sauce and adjust as needed to achieve a balance of salty-sweet flavors. Add more sugar if it's too sour. If it's too salty or sweet, add more lime juice.

Step 4. Marinate the shrimp
Add the shrimp to the sauce and toss to coat evenly.

Step 5. Stir-fry the shrimp
Heat oil over medium-high heat. Once hot, add the shrimp along with the sauce.

Stir-fry for about 2 to 3 minutes or until the shrimp firm up and turn pink. They will also take on a light brown color from the sauce.

Avoid overcooking, as the shrimp will become rubbery.
