Ingredients
– 8 – 12 fresh shrimp
– Capellini pasta
– 2 tablespoons of olive oil
– 3 cloves of garlic
– 1 purple onion
– 2 teaspoons of chili powder
– 2 yellow lemons
– 1 cup of white wine
– 6-8 heirloom tomatoes
– 1 cup of seafood broth
– Butter, cheese
– Salt, freshly ground black pepper
– 1 sprig of fresh thyme
Instructions
Step 1: Prepare the Ingredients
– Boil a pot of water, add a pinch of salt, cover with a lid and wait for the water to boil to cook the Capellini pasta
– Clean and peel the shrimp, marinate with spices
– Finely chop the garlic, thinly slice the purple onion, cut the heirloom tomatoes in half
– Squeeze the lemons to extract the juice
Step 2: Cooking Process
– Heat a pan, add 1 tablespoon of olive oil, when hot add finely chopped purple onion and garlic into the pan, stir well for 2 minutes.

– Add 1 cup of white wine to the pan and cook until the wine is almost evaporated. Then add seafood broth, dried chili, heirloom tomatoes, and lemon juice to cook together. When the sauce is boiling, add butter, season with salt, and freshly ground black pepper to taste.

– Add a little olive oil to another pan, put the marinated shrimp in, sear the shrimp on each side for 1 minute, sprinkle with grated lemon zest on the shrimp for fragrance. Then transfer the shrimp to the sauce.


– When the pot of water for cooking pasta starts boiling, add the Capellini pasta in, stir with chopsticks to prevent sticking, cook for about 3-5 minutes until the pasta is done.

– After the pasta is cooked, remove it from the pot and put it into the shrimp sauce. Stir the pasta in the sauce to let it absorb the flavors. Finally, garnish with fresh thyme leaves in the pasta pan before serving.
