The ingredients and method for this dish are incredibly simple, requiring just a bit of your time to create a fragrant and delicious seafood noodle dish to delight your entire family. Required Ingredients:

- Fresh rice noodles: 800 grams
- Squid: 300 grams
- Fish cakes: 200 grams
- Rock lobster (or abalone): 300 grams
- Tofu: 2 pieces
- Beef bones: 500 grams
- Shiitake mushrooms: 30 grams
- Sweet cabbage: 300 grams
- Tomatoes: 3 pieces
- Scallions
- Lime: 1–2 pieces
- Turmeric powder: 2 teaspoons
- Seasonings: broth cubes, fish sauce
How to Cook Seafood Noodle:
- Finely chop scallions
- Clean tomatoes and cut into wedges
- Soak shiitake mushrooms in warm water until they expand

- Wash and cut sweet cabbage into chunks, blanch until tender, then transfer to a plate
- Clean squid and shrimp, blanch briefly in boiling water, peel shrimp and cut squid into bite-sized pieces

- Soak clams with crushed chili to release impurities, then boil, remove meat, and reserve the broth.

- Chop beef bones, add 2 liters of water and the boiled clam water, then simmer for about 45 minutes to make broth, remember to skim off any foam for a clear and smoother broth!

- Cut tofu into bite-sized pieces and fry until golden brown
- Also fry fish cakes until golden brown. When the bone broth is almost ready, add shrimp and squid to cook until tender, then quickly transfer to an ice water bowl to keep them crispy

Next, add the shiitake mushrooms into the pot of simmering bone broth for about 5 minutes. Then, introduce the tomatoes and let it simmer for a while longer. Sprinkle in the turmeric powder and season to taste. Finally, turn off the heat.

Lastly, briefly blanch the rice vermicelli and place it into a bowl. Arrange the vegetables, shrimp, squid, fish cakes, clams, and tofu on top. When serving, pour hot broth over and garnish with some scallions. Add a squeeze of lime if desired.
