Preparation for this specialty dish CƠM NỊ CÀ PÚA is crucial, requiring finely chopped and minced shallots, garlic, and roasted peanuts.

In this recipe, beef is the main ingredient. You can choose either tendon or brisket, cut into moderate-sized pieces to prevent shrinkage during cooking.

First, let's prepare the Cơm Nị. Heat 1 tablespoon of butter with a cluster of whole black peppercorns, 2 cinnamon sticks, and 2 cloves. Adjust the amount of cloves and cinnamon based on your family's taste preferences. Once fragrant, add 1 tablespoon of curry powder and 1 tablespoon of turmeric powder to give the Cơm Nị a vibrant yellow color. Stir until the powders are well combined, then add chopped shallots and rinsed rice. Stir until the rice is evenly coated.

Next, add a packet of unsweetened yogurt and enough water to cover the rice by about 1cm. Cover tightly and cook over medium heat, similar to cooking regular rice.

Once the rice has absorbed all the water and is almost cooked, add 1 tablespoon of seasoning powder + 4 tablespoons of coconut milk, mix well, and add a handful of washed raisins to the rice. Stir to distribute the seasoning evenly and cover to cook for an additional 15 minutes until the rice grains are fully cooked.

After cutting the beef into bite-sized pieces, marinate with ½ teaspoon of ground pepper + 1 teaspoon of salt + ½ teaspoon of MSG + 1 teaspoon of curry powder + 2 teaspoons of curry oil. Mix well and let the meat marinate for 30 minutes.

Simmer over low heat until the beef is tender. Finally, add grated coconut + thick coconut milk. Mix once more and it's ready to serve.
