- Fresh clams: 2kg
- High-quality fragrant rice: 400g
- Puffed pork skin: 50g
- Peanuts: 150g
- Pickled star fruits: 2 fruits
- Green banana stems: 200g
- Fresh vegetables: thinly sliced young banana cores, banana flowers, split water spinach, bean sprouts, lettuce, and aromatic herbs of your choice
- Dried shallots, ginger, lime, roasted chili, shrimp paste, spices, seasoning powder, and cooking oil.
How to Cook Clam Rice:
Step 1:
- Rinse the fragrant rice thoroughly, add water to the pot to cook the rice. Then fluff the rice and let it cool.
- Roast the peanuts until golden and fragrant.
- Pickled star fruits, cleaned and cut into thin star-shaped slices.
- Square-cut pork skin, deep-fried in hot oil until golden. Remove and drain excess oil.

Step 2:
- Clean various fresh vegetables and herbs, soak them in diluted saltwater for about 10-15 minutes, then rinse again and let them drain.
- Slice dried shallots and ginger into thin slices.

- Boil a pot of water, add the julienned green banana stems, cook until tender, then remove and squeeze thoroughly to eliminate excess water.

Step 3:
- Clean the clams thoroughly, soak them to remove sand. Put the clams in a pot with a teaspoon of sea salt, boil until cooked.
- Strain the clam cooking liquid into a large bowl and let it settle. Separately pick the clam meat into a bowl and marinate with a tablespoon of fish sauce.
- Heat a pan with some cooking oil, sauté the dried shallots until fragrant, then add the clam meat and stir-fry until crispy.

Step 4:
- Boil the strained clam cooking liquid, remove impurities. Bring it to a boil, season with 1 tablespoon of fermented shrimp paste, and adjust the taste with seasoning. Add sliced ginger to make the broth and keep it hot on the stove.
- Fluff the rice in a bowl, add various fresh vegetables, herbs, crispy fried pork skin, and stir-fried clams on top. Pour the hot clam broth into the bowl.
- Sprinkle a few roasted peanuts on top and it's ready to be enjoyed.
