Because, Southern customers have shared that if they want to eat Southern dishes 'authentically' in Hanoi, they only go to Quan An Ngon. And it's not just people from the South living, working, or traveling to Hanoi, but also people from the North working in Saigon, they eat, they like it, it's not possible that every time they crave, want to eat Southern dishes, they have to go to the South. This is also a way to develop Vietnamese cuisine, specifically Southern dishes, for Hanoi residents'
