- Glass noodles: 300g
- Pork belly: 200g
- Shiitake mushrooms: 10g

- Cilantro, green onions: 100g
- Dried shallots: 2 bulbs
- Bean sprouts: 100g
- Carrot: 1 small
- Seasonings: salt, fish sauce, black pepper, bouillon powder, cooking oil
How to make eel glass noodle stir-fry:
Step 1: Prepare the Ingredients

- Clean the eel, boil it, and remove the meat.

- Wash the pork belly, cut it into small pieces.

- Soak wood ear mushrooms and shiitake mushrooms until they expand, then slice them.
- Clean and finely chop cilantro and green onions. Rinse bean sprouts and drain.
- Finely chop dried shallots, peel and julienne carrots.
- Crush eel bones, strain and collect the broth.
Step 2: Execution
- Marinate the eel with a dash of fish sauce, salt, bouillon powder, and black pepper.
- Place a pan on the stove, add oil, sauté the dried shallots until fragrant, add the eel, stir until it firms up, then transfer to a bowl.
- In the same pan, add a bit more cooking oil, stir in the pork belly until it starts to firm up, then add wood ear mushrooms and shiitake mushrooms. Add the eel back in, stir, and turn off the heat.
