Amidst the quaint town of Bần Yên Nhân in Mỹ Hào district, lies the renowned specialty of Hưng Yên - Bần tofu. In the past, Bần tofu was a delicacy fit for kings. Today, it remains a celebrated condiment, cherished by many.
Made from glutinous rice, soybeans, and salt, the tofu-making process involves three stages: fermentation, soybean crushing, and tofu drying. The glutinous rice is cooked into a sticky mass and left to ferment for two days and two nights until it turns green. To infuse it with a distinctive fragrance, the rice is fermented with lotus leaves. The soybeans are roasted until golden, ground into fine powder, and soaked in pottery for 7 to 10 days until they acquire a red-yellow hue. The green fermented rice is then moistened and left to ferment for another day and night, turning it yellow. Next, the rice is mixed with an appropriate amount of salt and left to dry in the sun for at least a month. The resulting tofu boasts a golden hue reminiscent of honey.
