2. How to Cook Pandan Sticky Rice
Ingredients for Pandan Sticky Rice:
- Purple pandan leaves: 1kg;
- Glutinous rice: 3kg;
- Coconut milk (optional);
- Rock salt: 15g.
Steps to Prepare Pandan Sticky Rice:
Step 1: Rinse the glutinous rice for making sticky rice. Cleanse the purple pandan leaves and boil them in 4.5 liters of water with 15g of salt. Boil vigorously for about 5 to 7 minutes until the vibrant purple color is infused, then strain to extract the essence. When the pandan water is still warm, immerse the rice, ensuring the water level is about 3cm above the rice. Soak for 6 to 8 hours.
Step 2: Scoop the rice into a rice cooker or a steaming pot. Once the sticky rice is cooked, pour coconut milk over it, stir well, and continue steaming for an additional 7 minutes. This ensures the rice absorbs the coconut milk, becoming moist and flavorful.
If you don't have a steaming pot, you can use an electric rice cooker, but keep in mind that the rice might not be as fluffy as when steamed in a traditional pot.
Once the sticky rice is ready, transfer it to a plate, and it's time to indulge.
