II. Exemplary Essay Explaining Quang's Earth Noodles
The Central region is renowned for its many enticing and flavorful specialty dishes, from the dreamy Rice with Baby Clams of Hue, to trying the Pork Belly Rice Paper Rolls in Da Nang, and even sampling a bowl of Cao Lau in the ancient town of Hoi An. Despite having traveled to many places and tasted numerous exquisite dishes, perhaps the most memorable for me is still Quang's Noodles, the beloved signature dish of Quang Nam province.
Having lived and worked in Da Nang for a long time, I've become accustomed to the cuisine of the sunny and windy Central region. Quang's Noodles originate from Quang Nam, and Da Nang city is part of the old Quang Nam province, so eating Quang's Noodles in Da Nang has become a natural thing. Personally, I've been attached to Quang's Noodles for nearly 4 years, sometimes for breakfast, sometimes for dinner, alternating like that, not knowing if they add any addictive spices but I eat without getting bored. Quang's Noodles come in many varieties, not just one boring type. If tired of chicken noodles, one can switch to other types like shrimp and meat noodles, beef noodles, jellyfish noodles, frog noodles, or vegetarian Quang's Noodles, all equally delicious, truly diverse and rich, making tourists marvel.
I once attempted to learn how to make Quang's Noodles to satisfy my craving, and discovered that this delicacy is not difficult to make. Perhaps the most challenging part is making the noodles, ensuring they are both white and soft, without any sour or strong floury smell. When you pick up a strand of noodle under the sunlight, you can see it glisten, making it even more appetizing. Firstly, we prepare some fresh rice flour, fragrant and sweet, add a little salt for richer flavor, then mix with water until dissolved, adding a bit of turmeric powder for a beautiful yellow color. After the flour is fully dissolved, let it rest for about 30 minutes. During this time, we prepare a pot of boiling water, using a two-tier steamer is best. Using a flat-bottomed mold with a wide mouth that fits on the top tier of the steamer, we steam each thin layer of dough, then transfer them to a flat plate, layer by layer, brushing a little oil on top of each layer to prevent sticking. Once all the dough is steamed into cakes, we cut them into strands with a width of about 1 millimeter, the most beautiful. After completing the noodle-making process, we move on to making the broth to mix with the noodles, which is crucial in determining the deliciousness of the whole dish. Depending on personal preference, choose the type of meat that suits you. After preparing, marinate with salt, sugar, pepper, fish sauce, and crushed shallots, mix well, then marinate for about 15 minutes. Using a hot pan, sauté the shallots until fragrant, then add the meat and stir until cooked, adding a little food coloring or sugar to make it visually appealing. Once the meat is cooked, add water gradually, then taste to adjust the seasoning, add some cilantro and spring onions for aroma.
When eating, we prepare the noodles in a bowl, add some accompanying vegetables such as lettuce, fish mint, Vietnamese balm, coriander, sprinkle some roasted peanuts, then pour the broth, add the meat, and we have a delicious bowl of noodles. Quang's Noodles, though prepared very simply, have a very delicate flavor. Eating it, you can feel the refreshing taste of rice flour, the freshness of raw vegetables, chewing on fragrant and crunchy peanuts, biting into a piece of well-seasoned meat, it feels like the flavors of heaven and earth are melding together. Truly delicious, within its simplicity lies many subtleties, like the hearts of the people of Quang's land, simple yet soaked in the sincere affection of the Central region.
Quang's Noodles are one of the imprints, memories that I associate with Quang Nam - Da Nang land. Perhaps even if I have to leave this land in the future, I will always remember the wandering mornings, eating Quang's Noodles at small stalls in front of school, unforgettable gentle people, steeped in simple affection, unforgettable radiant Da Nang, sparkling Hoi An, sweet Quang Nam countryside.
